Ingredients:

  1. ½ kg aloo
  2. 2 tsp turmeric 
  3. Salt as per taste 
  4. 4 tsp Oil 
  5. 1 tsp Jeera
  6. 2 ½ tsp red chilli powder 
  7. 1 tsp coriander powder 
  8. Few coriander leaves 
  9. Few mint leaves 
  10. 2 inch ginger 
  11. 12 garlic
  12. 4 green chilies 
  13. Water as required 
  14. 1 big size onion, chopped in small size 
  15. 2 tomatoes, chopped in small size 
  16. 1 tbsp garam masala
  17. 1 tsp Kasuri methi

Other preparation:

  1. Wash and peel the potatoes, cut into cubes
  2. Add ½ tbsp salt and ½ tbsp turmeric 
  3. Pressure cook for 1 whistle
  4. Add garlic, ginger, green chilies, coriander leaves and mint leaves to a jar and grind them completely like a fine paste by adding water to it

Preparation of aloo curry with coriander leaves(kothimeera) recipe with step-by-step instructions and video:

  1. Heat the oil in a non-stick pan
  2. Add boiled potatoes and fry them for a minute 
  3. Add ½ tsp red chilli powder, salt and ¼ tbsp turmeric, mix everything slightly and fry for a 2 minutes in low flame 
  4. Take out from the pan 
  5. Add oil to the same pan, add jeera to it and fry for a while
  6. Add onion to it and fry until onion gets transparent 
  7. Add tomatoes and mix everything and cook everything for a minute, maintain low to medium flame 
  8. Add coriander paste to it and mix everything, cook for 2 minutes in low flame 
  9. Add red chilli powder, salt, coriander powder, turmeric and garam masala to it and mix everything completely and cook until oil separates from them 
  10. Add some water to it and cook for another 5 minutes 
  11. Now Add fried potatoes to it and mix everything together and cover the lid, cook for 5 minutes in low to medium flame
  12. Add crushed kasuri methi to it mix well and cover the lid for a minute and turn off the flame
