Spinach belongs to the Chenopodiaceae family, which includes beetroot, chard and quinoa.

Ingredients:

  1. 2 cups rice
  2. 4 cups water
  3. 2 tsp oil
  4. 1 tsp ghee
  5. 2 bay leaves 
  6. 4 elachi
  7. 2 inch cinnamon 
  8. 3 cloves
  9. 1 tsp jeera
  10. 7 green chilli
  11. 1 cup palak
  12. 1 tomato
  13. Salt as per taste
  14. ½ tsp sugar
  15. 1 onion, chopped in small size
  16. 1 tsp ginger garlic paste
  17. 1 tsp turmeric powder
  18. Few curry leaves
  19. 2 tsp coriander powder
  20. Few coriander leaves

Other preparations:

  1. Wash and soak rice for 30 minutes 
  2. Grind the green chilies, palak and tomato
  3. Add salt and sugar to it and make them paste

Preparation of palak rice with step by step instructions:

  1. Heat the oil and ghee in a heavy bottomed vessel 
  2. Add jeera, cloves, elachi, bay leaves and cinnamon, fry until they splutter 
  3. Add onion to it and stir everything fry until they get transparent maintain low flame
  4. Add ginger garlic paste and turmeric powder to it and stir everything until raw smell goes out
  5. Add palak paste for cook for 5 minutes and cook until raw smell goes out from the palak
  6. Add soaked rice to the vessel and fry for 2 minutes 
  7. Add water to it, salt as per taste and stir everything 
  8. Add coriander powder and few coriander leaves 
  9. Stir everything and cook for 2 minutes on high flame
  10. Cook for 10 minutes in medium to low flame
  11. Switch off the flame
  12. That's it palak rice is ready to serve
