 Aloo capsicum sabzi recipe with step by step instructions: 

Aloo capsicum sabzi is easy to make and the perfect combination for each other. It is an easy and quick recipe for beginners. It goes with plain rice, chapati or roti. 

We can also make different types by adding different veggies to them, cauliflower, beans and even peas. 

Aloo provides important nutrients such as vitamin c, vitamin B6 and various minerals. 

Capsicum is mainly made up of water and carbs. Most of the carbs are sugar, such as glucose and fructose. Bell pepper or capsicum is also a decent source of fiber. Capsicum is very high in vitamin C, with a single one providing up to 169% of the RDI. Other vitamins and minerals in capsicum include vitamin K1, vitamin E, vitamin A, folate and potassium. Capsicum includes improving eye health and reducing the risk of anaemia.

Here we are using green capsicum for this recipe. You can take green capsicum or coloured capsicum as per availability. 

Tips:

  1. Wash, peel and chop the potatoes. Add them to a bowl of salted water till we use them for cooking. 

Ingredients:

  1. 4 tsp oil
  2. 1 tsp cumin seeds
  3. 1 tsp mustard seeds
  4. 2 sprig curry leaves
  5. 1 onion chopped in small size
  6. 2 green chillies chopped in small size
  7. 1 tsp ginger garlic paste
  8. 1/2 tsp turmeric
  9. 4 capsicum chopped in cube 
  10. 3 potatoes chopped in cube
  11. 2 tsp red chilli powder
  12. Salt to taste
  13. 100ml water
  14. 1 tsp Coriander powder
  15. 1/4 cup coriander leaves 

Instructions:

  1. Heat the oil in a pan
  2. Add cumin and mustard seeds fry till they splitter
  3. Add onion, curry leaves and saute it until it gets transparent
  4. Add capsicum and stir it, cook for 2 minutes in low to medium flame.
  5. Add ginger-garlic paste, turmeric to it and mix well to fry till it smells good.
  6. Add potatoes and stir everything well and cook for 2 minutes on a low flame
  7. Cover and cook on a low flame till almost cooked
  8. Add red chilli powder, salt to taste and stir everything and cook for another 2 minutes 
  9. Add some water to it and cook
  10. Add coriander powder to it and stir everything.
  11. Stir often and slowly so that the potatoes don't get mushy.
  12. Cover the lid and maintain the low flame for a while and turn off the flame.
  13. Add coriander leaves.

  1. Is water necessary for the recipe? It is not necessary if we want curry or sabzi, we need to add water, if you want to fry don't need to add water. Depending on your wish.
  2. We can add tomatoes to the recipe? You can add tomatoes but add at the end or after adding potatoes.
