Ingredients of tomato rice:
- 4 tsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 4 green chillies
- 1 onion, chopped in small size
- ¾ tsp turmeric powder
- 1 tsp ginger garlic paste
- 4 tomatoes
- 2 cups rice
- 4 cups water
- 2 sprig curry leaves
- 1 tsp coriander powder
- Few coriander leaves
- 1½ tsp red chilli powder
- Salt as per taste
- Few mint leaves

- Wash and soak the rice for 20 minutes
- Grind the tomatoes as puree
Preparation of tomato rice with step by step instructions:
- Heat the oil in the pressure cooker
- Add mustard seeds, cumin seeds, fry until they splitter
- Add onion to it and saute it until they get transparent
- Add green chillies, mint leaves, and curry leaves fry them
- Add ginger-garlic paste and turmeric powder to it and fry them until raw smell goes out of it
- Add tomato puree to it and mix it well cook the puree fry for 5 minutes
- Add red chilli powder, salt to it and stir everything, cook for another 5 minutes or fry until the oil separates from the puree
- Add soaked rice to it and stir everything and fry for 2 minutes so that the rice texture gives a nice aroma
- Add water to it, and give a nice stir and add coriander powder to it, stir everything
- Add few coriander leaves and cover the pressure cooker lid
- Cook for 3 whistle
- Open the lid after pressure goes out, that's it the tomato rice is ready to serve
