Brinjal/eggplant fry recipe preparation and method:

Ingredients:

  1. ½ kg brinjal
  2. 20 green chilies 
  3. Salt to taste
  4. 3 tsp oil
  5. 1 tsp mustard seeds
  6. 1 tsp cumin seeds 
  7. 1 onion, chopped in small size
  8. 2 sprig curry leaves 
  9. 1 tsp coriander powder
  10. Few coriander leaves
  11. ½ tsp turmeric 
  12. 6 garlic

Other Preparation:

  1. Crush the garlic and green chilies in a chopper
  2. Chop the brinjal and add them to a bowl of salted water till we use them for cooking

Preparation of brinjal fry with step by step instructions:

  1. Heat the oil in the heavy bottomed pan
  2. Add cumin seeds, mustard seeds fry until they splutter 
  3. Add onion and curry leaves to it, fry until they get transparent 
  4. Add green chilies crush to it, fry for 3 minutes
  5. Add brinjal to the pan, and add turmeric powder and salt as per taste stir everything and cook until they get soft or cook for 5 minutes 
  6. Add coriander powder and stir everything and cook for a while, Turn off the flame
