Bitter gourd has some bitterness by removing the outer part it reduces some bitterness. For bitter gourd uragaya we are using lemon to enhance the taste of the pickle and balance the bitterness. We can store this in the refrigerator for more than 6 to 7 months or more. By frying the bitter gourd in the oil the bitterness will also reduce the bitterness. Here I Am using the same oil for thadaka, also the amount of oil we are using for deep frying or adding ½ inch to the pan. It tastes more awesome after 2 to 3 hours. The lemon juice and masala should hold to the Bitter gourd.

Kakarakaya Uragaya/ Bitter Gourd pickle recipe consume time is:

Ingredients:

  1. 500 gm kakarakaya/Bitter Gourd 
  2. Oil for deep fry
  3. 4 tsp red chilli powder 
  4. Salt as per taste (3 tsp salt)
  5. 3 tsp cumin seeds 
  6. 1 tsp mustard seeds
  7. 1 tsp fenugreek seeds 
  8. 10 garlic crushed 
  9. 4 dry red chilies 
  10. Few curry leaves 
  11. 2 tsp turmeric powder 
  12. 2 ½  tsp coriander powder 
  13. 2 tsp ginger garlic paste 
  14. 3 lemons

Other preparation:

  1. Slightly peel the Bitter gourd and cut in round shape
  2. Dry roast the fenugreek seeds and cumin seeds and make them as a fine powder (fenugreek seeds should be half of the cumin seeds )

Preparation of Kakarakaya Uragaya/ Bitter Gourd pickle with step-by-step instructions and video:

  1. Heat the oil in the heavy bottomed pan 
  2. Add chopped Bitter Gourd/kakarakaya in a batches and fry until the Bitter gourd turns to golden brown color 
  3. After that remove the Bitter gourd from the pan and place it in the bowl 
  4. Repeat the same process for the remaining Bitter gourd/ kakarakaya 
  5. After completion of kakarakaya/ Bitter Gourd prepare the thadaka
  6. Add cumin seeds, mustard seeds fry them until they splutter 
  7. Add garlic, dry red chilies, curry leaves fry them
  8. Add turmeric powder and fry for a while And turn off the flame
  9. Now take the mixing bowl and add all dry ingredients to it (red chilli powder, salt, turmeric, coriander powder, ginger garlic paste, jeera and fenugreek powder)
  10. Mix them everything and add the thadaka to it and mix them thoroughly 
  11. Add bitter gourd/kakarakaya to it and mix them gently 
  12. Add lemon juice to it and mix them thoroughly 

That's it kakarakaya Uragaya/Bitter gourd pickle is ready to serve
