This recipe can be prepared very easily and when I have less time to prepare I usually go for this recipe. In this recipe, the aloo cubes have some crispness while eating. Children love to eat this simple potato fry. 


Crispy aloo fry recipe can be served with rice or roti. My favourite combination with aloo fry is sambar with rice. Whenever I want to do sambar I prefer to do aloo fry for sure. This makes my perfect meal of the day with this combination. Everyone loves to eat "Potato fry". And it is such a crunchy combination of Tomato dal, Sambar, Rasam and also curd.


And mainly don't overcook potatoes otherwise they will become mushy and don't give a perfect taste. Immerse potato cubes in water with salt for 30 minutes to prevent them from turning dark. Potatoes become stale in hot weather so try to keep leftover curry in the refrigerator immediately after use. 


I added potato cubes to oil, and always use fresh potatoes and have thin skin for crispy aloo fry. It is effortless to make perfect crispy potato fry.

Crispy potato fry preparation and method




Ingredients:

  1. 500 grams of potatoes cut into cubes
  2. 2 medium-sized onions thinly sliced
  3. 4 green chillies vertically slit
  4. 6 garlic crushed 
  5. 2 sprigs curry leaves 
  6. 2 and 1/2 tsp of red chilli powder 
  7. Salt as per the taste
  8. 1/2 tsp of turmeric powder 
  9. 1 tsp of coriander powder 
  10. 1/4 cup of chopped coriander leaves 
  11. 4 tsp of oil 

Other Preparations:

  • Before you fry potatoes, peel them, dice them and soak them in water for 30 minutes, then the potatoes lose their surface starch and come out crunchy and crispy when fried.

Instructions:

  1. Heat oil in a non-stick pan, add potato cubes, (soaked in water for 30 minutes) and saute it for 2 minutes don't close the lid.
  2. It turns to light golden colour down the side and makes toss frequently so it doesn't stick to the pan and it cooks equally
  3. Add sliced onions, vertically slit green chillies, crushed garlic to it and mix them thoroughly, cover the lid and cook for 5 minutes 
  4. Add turmeric powder and salt to it mix well Cook for 2 minutes until raw smell goes out, and don't cover the lid and cook
  5. Add red chilli powder and mix it and no need to cover the lid, cook on high flame for another 2 minutes and toss the potatoes.
  6. Add coriander powder mix well and now cook on low flame for 2 minutes
  7. Add chopped coriander leaves and turn off the flame

  1. How to fry the potatoes without water? Don't cover the lid and roast with medium flame and it gets a golden colour.
  2. Is it necessary to use garlic? No, it's not necessary but it adds flavour to the fry.
