Vegetable biryani, dalcha and raita recipe with step by step instructions
Dalcha is a dal made with different vegetables and a mixed dal. This dal is served as a side dish for a spicy biryani and is not very spicy. Dalcha can easily be called a silent killer. While everybody knows and raves about biryani, not many may know how important a dalcha is when you talk about biryani.
Here we are doing a simple way of dalcha that everyone can make easily. Try this recipe. It tastes yummy.

Ingredients for dalcha:
1 cup Chana dal/Pappu
3 brinjal chopped
3 tomatoes chopped
Lemon size tamarind
1/2 tsp turmeric
1 tsp red chilli powder
1 tsp oil
Salt to taste
500 ml Water
For thadaka and seasoning:
2 tsp Oil
1/2 tsp cumin seeds
1/2 tsp mustard seeds
2 curry leaves sprig
1 inch Ginger grated
1/2 tsp Hing
Dalcha recipe with step by step instructions:
Other preparation:
Wash the chana dal 2 to 3 times
Preparation of dalcha:
In a pressure cooker add washed chana dal
Add brinjal and tomatoes to it
Add turmeric and tamarind to it
Add red chilli powder and oil to it
Add water to it and mix well
Now pressure cook the dalcha for 5 whistles.
After pressure leaves, open the lid and mash the chana dal and vegetables with the spoon which were cooked.
For thadaka or seasoning:
Heat the oil in a pan
Add cumin seeds, mustard seeds to it
Add curry leaves and hing, fry until they splitter
Add grated ginger to it and mix well, until the raw smell goes out
Now add the cooked dal to it and adjust the consistency of dalcha by pouring water into it and adding salt to it and mix well.
Close the lid and Cook for 5 minutes
Add coriander leaves.
And turn off the flame.

Ingredients for vegetable biryani:
2cup rice
1 tsp of beers
1/2 tsp black pepper
2 bay leaves
5 cloves
1-inch cinnamon
3 elaichi or cardamom
Salt to taste
4 tsp Ghee
600 ml water
1/2 cup Curd
1/2 tsp turmeric
1/2 tsp coriander powder
1 tsp garam masala
Salt to taste
Vegetables required:
2 potatoes chopped as cubes
2 carrots chopped as cubes
3 beans chopped to 1 inch
Other preparation:
For rice:
Wash the rice 2 to 3 times and soak for 30 minutes.
For vegetables:
Add chopped potatoes, carrots, beans to a mixing bowl
Add curd, red chilli powder, turmeric, coriander powder, garam masala and salt and mix well
Rest it for 20 minutes

Preparing for rice:
Add 4 cups of water to the bowl which were measured to rice
Turn on the flame and boil water
Add masala to the water that is jeera, black pepper, bay leaves, cloves, elaichi, cinnamon and salt to taste.
And add ghee or oil according to your taste. Here I added ghee.
And boil the water.
After boiling the water add only rice that was soaked in the water
Cook rice for 80% and after that separate the rice for water
For vegetable cooking:
Heat oil or ghee to the pan
Add jeera and green chillies to it and fry it
Add grated ginger to it and fry until raw smell goes out
Add vegetables which were mixed with curd and cook for 5 minutes
Add water to it and cook for another 5 minutes by closing the lid
Cook vegetables up to 80%
Now turn off the flame
Biryani preparation:
Take a heavy bottom bowl and Greece with oil or ghee
Now keep the rice as the first layer and cooked vegetables as the second layer
Repeat the same process until rice and vegetables are completed.
Place the layer of rice and vegetables at the end add cashew nuts and garam masala to it
Cover with aluminium foil and close the lid
Heat the pan and keep the biryani bowl on the pan so that it cooks evenly and Keep weight on the lid so that it cooks on dum.
Cook in low flame for 20 minutes.
For raita recipe:
Ingredients:
1 cup curd
2 green chillies
1 grated carrot
1 onion chopped
1 tomato chopped
Salt to taste
100 ml water
Preparation of raita:
Beat the curd and add salt to it
Add green chillies, onion, carrot, tomato and water
Mix well.
